Gardenia Blue: A Comprehensive Analysis of Natural Blue Pigments
Gardenia blue is a kind of natural blue pigment extracted from the fruit of Gardenia jasminoides in the family of Rubiaceae, which has unique chemical properties and wide application value. As the food natural pigment approved to be used by GB2760-2011 Hygienic Standard for the Use of Food Additives in our country, Gardenia blue is highly favoured in the field of food, medicine and cosmetic with its natural source and safety.
Basic properties and production process
Physicochemical properties:
Colour range: from sky blue to sea blue (hue can be adjusted by process)
Solubility: easily soluble in water, aqueous ethanol and aqueous propylene glycol
pH stability: stable hue in the range of pH4-8, excellent acid-resistance (still remain stable under the condition of pH2.5)
Thermal stability: no fading by heating at 120℃ for 60 minutes
Sensitivity: meet Fe²⁺ or Sn² ⁺ ions are easy to produce colour change
Main components: Containing carotenoids such as saffronin and saffronic acid, with stable molecular structure.
Application field and use specification
Food industry application:
Beverage field: tea drinks, carbonated beverages, fruit juice drinks, etc. (usage 0.005%-0.01%)
Candy and chocolate: ice cream, colourful decoration on pastry, candy coating, jam, etc.
Featured application: often paired with the natural yellow pigment to formulate green pigments of different colours
Cosmetic application:
Natural pigment additive for eye shadow, lipstick and other make-up products
Particularly suitable for combining with cosmetic matrices due to its strong colouring power for proteins

Used as drug colouring agent
It has certain antibacterial, anti-inflammatory and other pharmacological effects
Usage standard: The maximum usage amount specified in GB2760-2011 varies according to food categories, generally not exceeding 0.1g/kg.
Safety and precautions
Safety assessment:
The oral LD50 value of rats reaches 16.7g/kg, which belongs to the actual non-toxic level
It has been included in the use standard of food additives in China, and has passed a number of safety evaluations
Potential Risks:
Overdose reaction: nausea, vomiting, diarrhoea, dizziness and other symptoms may occur
