Carrot Red (Raphanus sativus L.) is made from carrot roots, extracted and refined, and can be used as a food additive in powder or liquid form, diluted with dextrin. It is a deep red solution with a slightly peculiar odor. It is not soluble in polar solvents such as ethanol, acetone, chloroform, and carbon tetrachloride, but soluble in water. The water solution is bright red in acidic solution, stable in color, and does not change color after prolonged boiling. No precipitation occurs in the solution. In alkaline solution, the color is unstable. Upon changes in pH: the color of the pigment changes with changes in the pH of the solution, ranging from orange-red to purple-lavender to blue in the pH 1-8 range, with red being the stable color in the pH 1-6 range, and the color becoming blue and less stable as pH exceeds 7; it does not fade under scattering light or artificial light over a long period of time; it has strong heat resistance and does not change color after prolonged boiling. ...
